Hillbilly Fruit Cake
- 2 2/3 c. red candied cherries
- 2 1/4 c. candied pineapple
- 1 1/2 c. quartered dates
- 3 c. pecan halves
- 1/2 c. all-purpose flour
- 1 pkg. white cake mix
- 1 3/4 tsp. salt
- 1 tsp. vanilla extract
- 1/3 c. milk
- 2 eggs
- Dredge cut up fruit with 1/2 cup flour.
- Mix cake mix as directed; add extracts.
- Beat 2 minutes with beater on medium speed.
- Add 1 egg at a time; beat 2 minutes longer.
- Spread evenly on 2 wax paper covered and oiled bread pans or in oiled and wax paper covered angel food pan.
- Bake 3 to 3 1/2 hours at 275u0b0 with a shallow pan of water below the cake.
- Cool and glaze with hot white corn syrup.
- May be decorated with candied cherries or pineapple.
