Pasta With Artichoke Hearts
- 2-4 cans well drained, coarsley chopped artichoke hearts
- 6-8 slices of bacon., chopped
- 2-4 TBSP butter
- 1/2 cup diagonally sliced green onions, with parts of green tops
- 1-2 cups, plus, heavy cream
- 1/2 cup plus grated parmesean
- Minced parsley, I have used dry, but fresh is better
- Fresh ground pepper
- 1/2 to 1 pound spaghetti cooked al dente, and drained
- In a large skillet, cook the bacon until crisp. Drain on paper towels. Pour off all but 2 TBSP bacon grease. Melt butter with the bacon grease. Add green onions and cook until tender, about 3-5 minutes. Add the cream, parmesean, parsley, and pepper. Heat through then add the artichokes and heat.Toss with spaghetti and top with crumbled baco and serve with additional cheese.
- (Add additional cream if too thick. You can also substitute asparagus for the artichokes.)
