Kim'S Fabulous Italian Meatloaf
- 1/3 lb Ground Pork
- 1/3 lb Ground Veal
- 1/3 lb Ground Beef
- Italian Breadcrumbs
- Parmesan Cheese
- 1 tbsp garlic powder
- 1 egg
- Oregano
- Basil
- Salt and Pep
- 1 Pkg Shredded Mozzarella Cheese
- Marinara Sauce (homemade or jarred)
- Mix together in large bowl all three meats with raw egg. You'll need to use your hands to kneed the meats and egg together. Gradually add Italian breadcrumbs (I usually just do it by sight, but I'd say a total of a cup or so). After breadcrumbs are mixed in, add Parmesan cheese (again, I do by sight, but probably about 1/2 cup). Add Garlic powder, oregano (1 tsp - or sprinkles), basil (1 tsp or sprinkles), salt and pep (just add to your desire).
- Once meat mixture is combined, lay out flat on waxed paper on counter top. (Might want to sprinkle some Parmesan cheese on wax paper just so meat doesn't stick). Flatten out Meat mixture to about 1/8" thickness. Add shredded mozzarella cheese all over surface. Add 1/4 cup of marinara sauce (just enough to coat the cheese). Then ...this is where is gets tricky ... starting from one end, start rolling the meat so that the cheese/sauce will end up spiraled in the middle. You'll probably be able to get one full roll and then tuck the meat so that everything doesn't fall out. Flip over so tuck is at bottom of roll and place in pan.
- Before oven, add mozzarella cheese and 1/2-cup sauce on top of meatloaf. I usually add a little more Parmesan cheese, oregano, salt and pepper once rolled up before sticking in oven. Then I usually serve with hot sauce...
- Cook at 375 degrees for about 45 min - 1 hour.
