Weight Friendly French Onion Soup

  1. 1. Add some water to the bottom of a skillet and add the peeled and sliced onions.
  2. 2. Keep an eye on the onions and make sure they do not burn. After they are nicely browned and carmelized, put them aside and sprinkle lightly with salt, pepper, and thyme.
  3. 3. Cut the pita bread lengthwise. Take about one teaspoon of olive oil and brush the inside of each pita bread.
  4. 4. Mash a garlic clove or two (depending on how garlicky you like things) with a bit of sea salt. When well-mashed, brush the garlic/salt mixture on the pita. Sprinkle with thyme.
  5. 5. Preheat the oven to 350. When oven is preheated, place the pitas on a rack and bake for five to ten minutes or until the bread is nice and crisp. Take the bread out to cool.
  6. 6. Open the stock/broth and add to a pot. Add the onions that are seasoned. Please feel free to add as much seasoning as you need.
  7. 7. When the soup is heated, place into bowls or those little soup bowls, sprinkle with parmesean and break up the pita and add to the soup as "croutons"
