Tomato ~ Basil ~ Garlic ~ Bruschetta
- 16 1/2-inch-thick slices of crusty french bread
- 6 large ripe plum tomatoes seeeded and diced
- 3 garlic cloves, minced
- 1/4 cup shredded mozzarella cheese
- 1/4 cup fresh grated parmesean cheese
- 8 basil leaves, minced
- 3 tablespoons olive oil
- Salt & Pepper
- Pre-Heat Broiler
- While broiler is pre-heating, combine seeded & diced tomatoes, minced garlic cloves, mozzarella & parmesan cheese, basil and olive oil. Add salt & pepper to taste and mix together. Set aside.
- On a baking sheet toast bread slices under a pre-heated broiler about three inches from the heat for about 1 minute on each side until they are golden brown. Top each bread slice with a nice portion of the tomatoe mixture and place under the broiler again until warm and the cheese begins to melt. Remove from oven and serve on a platter.
