Strawberry Pies
- Crust ingredients:
- 1 C. butter, softened
- 1/2 C. brown sugar
- 1 1/2 C. flour
- 1/2 C. walnuts or pecans, chopped
- Filling ingredients:
- 2 eggs, beaten until frothy
- 1 C. sugar
- 1 T. lemon juice
- 1 tsp. vanilla
- 20 strawberries, cut up or (10 oz. frozen)
- 1 C. heavy whipped cream or Cool Whip
- Crust:
- Thorough mix crust ingredients. Place in a 13" x 9" buttered pan. Bake at 400 degrees until slightly golden, stirring often. Check in 10 min. Remove 1/2 C. of crust ingredients to use later. Press remaining ingredients into pan.
- Filling:
- Beat homogenized egg whites until frothy. Fold in sugar, lemon juice and vanilla. Beat 20 minutes. Set aside.
- In another bowl, whip cream until fairly stiff, (cream will make peaks that bend slightly.) Fold egg mixture into cream.
- Place strawberries onto crust. Cover with the whipped cream mixture. Sprinkle with the 1/2 C. crust mixture and nuts.
