Dried Fig & Apricot Salad With Maple Balsamic Vinaigrette
- 2 small shallots, finely diced
- 2 teaspoons Dijon mustard
- 1/4 cup White Balsamic Vinegar
- 1/2 cup extra virgin olive oil
- 4 teaspoons maple syrup
- salt and black pepper
- spring mix
- 1/4 cup shaved parmesan or manchego
- 1/4 cup each dried figs and apricots, chopped
- 1. Make the dressing by combining the chopped shallot, Dijon and balsamic vinegar in a large mixing bowl.
- 2. Slowly drizzle in the olive oil while you whisk to emulsify.
- 3. Add the maple syrup and season to taste with salt and pepper.
- 4. Assemble salad by tossing greens and dried fruit in a large mixing bowl with maple balsamic dressing.
- 5. Top with shaved Parmesan or manchego.
