Pasta With Shrimp And Garlic
- 3 ounces Whole wheat spaghetti
- 6 ounces Shrimp (peeled and deveined)
- 1/2 bunch Asparagus (trimmed and sliced thin)
- 1/2 cup Red Pepper (thinly sliced)
- 1/2 cup Peas (fresh or frozen)
- 1 1/2 teaspoons Garlic (minced)
- 1/2 teaspoon Salt
- 3/4 cup Yogurt
- 2 tablespoons Parsley (chopped finely)2
- 1 1/2 tablespoons Lemon Juice
- 1 1/2 teaspoons Oilve Oil
- 1/4 teaspoon Black Pepper
- 2 tablespoons Pine Nuts (roasted in small skillet over med-high heat 2- 4 minutes.
- 1. Bring a large pot of water to a boil. Add pasta and cook 2 minutes less than package directions.
- 2. Add shrimp, asparagus, red pepper, and peas. Cook until pasta is tender and the shrimp are cooked. 2 - 4 minutes.
- 3. Drain well.
- 4. Mix garlic and salt into a paste. Whisk in yogurt, parsley, lemon juice, oil and pepper.
- 5. Add the pasta mixture and toss to coat. Sprinkle with pine nuts.
