Sweet Potato Pie
- 1 Unbaked pie shell
- 1 pound of sweet potatoes (about 3 medium-size sweet potatoes)
- 2 large eggs
- 1 cup sugar
- 1/8 tsp nutneg
- 2 tbl spooon flour
- 1/2 cup milk, plus 2 tbl spoon
- 9 tablespoons of melted butter or margarine
- 3 tbl spoon white corn syrup
- 1/4 tsp vanilla
- Bake, boil, or microwave sweet potatoes until done all way through. Peel off skin and let cool.
- Place sweet potato in a mixing bowl and beat until smooth. Add eggs and beat until smooth.
- Mix all dry ingredients together in separate bowl for about 1 minute, and then add the sweet potato-and-egg mixture. Mix until well-blended. Then add milk and stir.
- add melted butter, corn syrup, and vanilla. Mix well, pour into shell and bake in a preheated oven at 375 degrees for about 45 minutes, or until set.
- For pie the pie crust:
- Ice water
- 1 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 3 tbl spoon of butter cut into cubes or 1/2 cup of shortening.
- Place the all dry ingredients together and add butter cubes. Place in a food processor or use your hands to mix the butter and flour until the batter has pebblt texture. Then add ice water 1 tbl spoon at a time until you have smooth pie dough. You should have enough dough for one 9-inch pie plate's top and bottom layers
