Sweet Potato Pie

  1. Bake, boil, or microwave sweet potatoes until done all way through. Peel off skin and let cool.
  2. Place sweet potato in a mixing bowl and beat until smooth. Add eggs and beat until smooth.
  3. Mix all dry ingredients together in separate bowl for about 1 minute, and then add the sweet potato-and-egg mixture. Mix until well-blended. Then add milk and stir.
  4. add melted butter, corn syrup, and vanilla. Mix well, pour into shell and bake in a preheated oven at 375 degrees for about 45 minutes, or until set.
  5. For pie the pie crust:
  6. Ice water
  7. 1 1/2 cups all-purpose flour
  8. 1 tsp salt
  9. 1 tsp sugar
  10. 3 tbl spoon of butter cut into cubes or 1/2 cup of shortening.
  11. Place the all dry ingredients together and add butter cubes. Place in a food processor or use your hands to mix the butter and flour until the batter has pebblt texture. Then add ice water 1 tbl spoon at a time until you have smooth pie dough. You should have enough dough for one 9-inch pie plate's top and bottom layers
