Stefans Bannock
- Dry Ingredients:
- 1 c. buckwheat (gluten-free) flour
- 11/2 c. quick oats
- 1 c. raisins
- 1 c. frozen cranberries
- 1 c. frozen blueberries
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp each of mace & nutmeg
- 1/2 tsp each of ginger, allspice, & cardamon
- 1/4 tsp cloves
- Wet Ingredients:
- 2 oz. oil (olive or safflower)
- 4 oz. honey
- 4 oz. eggs or cholesterol-free egg product
- 6 oz. soymilk or other non-dairy substitute
- Topping:
- 1 banana - sliced
- 1. Preheat oven to 375 u0b0F
- 2. Grease & flour a 10-inch cast iron skillet
- 3. Measure Dry Ingredients into 21/2 qt. mixing bowl, stir
- 4. Measure Wet Ingredients into 2-cup Pyrex cup
- 5. Pour Wet Ingredients into mixing bowl with Dry, mix
- 6. Pour mass into cast iron skillet
- 7. Top with sliced banana
- 8. Bake for ~30 min. (test with cake-tester to ensure completely baked)
