Gecko Villa Beef Salad
- 1 lb ground beef
- 2 tb fish sauce (nam pla)
- 6 Shallots, thinly sliced & chopped
- 2 tbs Ground roasted sticky rice;
- 2 tbs ground dried chillies (with whole seeds, not powder)
- 1/4 c Lime juice
- 2 tbs chopped spring onions
- 2 tbs coriander leaves, chopped
- A good handfull of mint leaves
- Heat approx half a cup of water to boiling point in a frying pan. Remove from heat.
- Add very finely ground beef. Mix until the beef has lost its red colour - no more!
- Remove meat and juices to a cold bowl. Allow to cool.
- Add lime juice, fish sauce, mint and shallots to the meat, together with the chopped green onion and cilantro and the ground roasted rice.
- Mix thoroughly.
- Serve centred on a plate surrounded by raw long beans, raw cabbage leaf cups, Thai sweet basil leaves and fresh dill.
- May also be presented with deep fried dried chillies (whole) and golden fried garlic or galangal.
