Pagoa With Sauce
- 2 1/1 lbs fresh salmon
- juice of 10 lemons
- 2 peeled & diced tomatoes
- 2 chopped onions
- 2 tbs chopped sweet pickles
- 1 cucumber, peeled & diced
- 2 minced garlic cloves
- 2 canned pimentos (chopped)
- 1/2 cup minced parsley
- Sauce:
- 1/2 cup olive oil
- 2 tbs wine vinegar
- 1/2 tsp dry mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- Bone and cut fish in small cubes, put in bowl and cover with salt water. Add lemon juice and marinate for 2 hours in refrigerator.
- Put tomatoes, onions, garlic, pimentos and cucumber in bowl. Cover and chill.
- When fish is ready, add chilled vegetable mixture. Add chopped pickles and parsley to fish.
- Mix in the sauce and 2 tbs of oil. Stir until smooth.
- Beat in rest of oil, a little at a time. Chill
