Fresh Salsa (Aka Barb'S Pico De Gallo)
- 2-3 Large, Ripe Tomatoes
- 1 White or Red Onion
- 3 Ripe Avocados
- 1 sprig fresh Cilantro
- 1 Jalapeno pepper
- 1 Green Bell Pepper
- 1 Red Pepper
- 1 Yellow or Orange Pepper
- 1 can Black Beans, rinsed and dried
- 2 Tbsp minced Garlic, plus more to season to taste
- 2 Tbsp Balsamic Vinegar, plus more to season to taste
- 1 Lime, for the juice
- Salt and pepper to taste
- Chop tomato, onion, and peppers (leaving seeds in for heat if desired). In a large bowl combine the chopped ingredients with the beans. Next, season to taste with the salt, pepper, garlic, vinegar, and lime juice. Stir all ingredients until well mixed. Chop the avocados into bite-sized pieces and add to the rest of the ingredients. Gently stir to blend in the avocado bits and serve! This salsa is addictive and goes great with corn chips. It's very versatile and can be made with other ingredients also, such as mango, corn , pineapple, and much more.
