Flounder Au Gratin
- 1 Tbsp. margarine
- 4 green onions, chopped
- 2 Tbsp. diced celery
- 2 Tbsp. flour
- 1/8 tsp. salt
- 1/8 tsp. white pepper
- 1/2 c. skim milk
- 1/2 c. (2 oz.) shredded Swiss cheese
- 1 (16 oz.) pkg. flounder fillets
- 1 Tbsp. minced fresh parsley
- vegetable cooking spray
- paprika
- Melt margarine in a small saucepan on low heat.
- Add onions and celery.
- Saute until tender.
- Stir in flour, salt and pepper.
- Cook 1 minute, stirring constantly.
- Gradually add milk.
- Stir well. Cook over medium heat until thickened and bubbly, stirring constantly.
- Add cheese.
- Lower heat and cook until cheese melts. Set aside.
- Drain fillets and arrange in a 6 x 10-inch baking dish that has been sprayed with vegetable cooking spray.
- Pour cheese mixture over.
- Cover.
- Bake at 350u0b0 for 25 to 30 minutes until fish flakes easily.
- Sprinkle with parsley and paprika.
- Serve.
- Yield: 4 servings of 164 calories each.
