Broiled Salmon With Mustard & Crisp Dilled Crust
- 1 slice sandwich bread, crust removed
- 1 oz plain potato chips
- 1 1/2 T chopped dill leaves
- 2 skin-on salmon filets
- 1/2 t olive oil
- 1/4 t salt
- ground black pepper
- 1 T Dijon mustard
- Adjust oven racks to top rack & and upper-middle position at 400 degrees.
- Pulse bread to crumbs the size of grape nuts cereal & toast 4-5 minutes on lower oven rack. Toss with potato chips & dill.
- Set oven to broil, rub salmon filet with olive oil, salt & pepper, broil salmon on upper rack on foil lined baking sheet until almost done.
- Remove fish from oven, spread fish with mustard & press bread crumb misture into filets. Return to lower rack & continue broiling until crust is deep golden brown, about 1 min longer.
