Dietetic Oatmeal Raisin Cookies

  1. Whip nonfat dry milk with ice water until stiff peaks form (4 to 5 minutes).
  2. Boil raisins in water for 2 minutes; drain; reserve liquid for later use.
  3. Combine butter, Sugar Twin, egg and vanilla.
  4. Beat 1 minute at medium speed.
  5. Sift together dry ingredients.
  6. Add liquid from boiled raisins.
  7. Then add dry ingredients.
  8. Beat 2 minutes at low speed.
  9. Stir in rolled oats and raisins.
  10. Fold in whipped nonfat dry milk.
  11. Drop from teaspoon 2 inches apart onto ungreased cookie sheet.
  12. Bake at 375u0b0 for 15 to 20 minutes.
  13. Makes 3 1/2 dozen.
