Hawaiian Meatballs
- 1 1/2 lb. ground chuck
- 2/3 c. cracker crumbs
- 1/3 c. minced onion
- 1 egg
- 1/2 tsp. ginger
- 1 tsp. salt
- 1/4 c. milk
- 1/2 green pepper, sliced in 1 inch pieces
- 1 can pineapple chunks
- 2 Tbsp. cornstarch
- 1/2 c. brown sugar
- 1/4 c. vinegar
- 1 Tbsp. soy sauce
- syrup from pineapple
- Mix first 7 ingredients, then make meatballs about the size of walnuts.
- Cook until done in skillet or in oven.
- Place meatballs, green pepper and pineapple chunks in 9 x 13-inch casserole.
- Mix cornstarch, brown sugar, vinegar, soy sauce and syrup from pineapple.
- Boil 1 minute.
- Pour this mixture into pan with meatballs and bake until heated through.
