Couscous Crust Garden Pizza
- 1 cup Spicy V-8 Juice or tomato juice
- 1 cup chicken broth
- 2 cups couscous
- 4 egg whites
- 6 medium okra (grilled) or any fresh veggie
- Assorted Peppers (seeded and grilled)
- 1/4 white onion (chopped or sliced)
- 1 breast Smoked or rotisserie chicken (picked)
- 5 fresh plum tomatoes (sliced)
- 2 T Tomato paste
- 4 oz Crumbled Feta Cheese
- 3 T Fresh Basil (chopped)
- 10 Kalamata olives ( chopped)
- Salt and pepper to taste
- Olive oil
- Bring juice and broth to a boil, add couscous, stir cover and set aside until cool to the touch. Oil the pizza pan, set aside. Mix egg whites in couscous, place in oiled pizza pan pressing into place. (Wet fingers help) until you have a thin, even crust over the pizza pan. (Will be some left over) Brush tomato paste over crust. Bake for 20 minutes in 450 degree oven.
- Top crust with remaining ingredients and bake in a 500 degree over for 10 minutes. Drizzle with a good olive oil!
