Sweet Potato Crust Pizza
- 2 sweet potatoes
- 1 egg
- 8oz of Cream Cheese
- 4oz pesto
- Parmesan cheese - 2 cup package (will probably not use it all)
- Pizza Toppings:
- spinach, sliced mushrooms, sausage, sliced black olives, sliced cherry tomatoes, mozzarella cheese (plus anything else you might want)
- Preparing the crust:
- Shred the sweet potatoes into a microwave safe bowl. Heat in the microwave for 4 minutes. Stir. Heat for an additional 4 minutes.
- Add 1 egg and a small handful of parmesan cheese into the sweet potatoes.
- Mix thoroughly and spread onto a circular 15" pizza pan (shape into a thin crust)
- Preheat oven to 350 degrees. Cook sweet potato crust for about 15 minutes.
- While Crust is cooking:
- Prepare Sauce:
- Mix the cream cheese and pesto together in a bowl.
- Prepare toppings:
- Saute Spinach in olive oil or butter
- Slice cherry tomatoes - you may want to set them on a paper towel or cook them in the oven for a bit to remove some of the moisture.
- Pizza construction:
- after the crust has baked for 15 minutes, begin adding the toppings.
- With a spoon, dollop the sauce onto the crust. Place back into the oven for a minute or two then pull out and spread evenly on the crust.
- *Make sure all toppings are pre-cooked (ex. sausage) as they will not be in the oven long enough to cook fully during the final baking process.
- Bump oven temperature to 425 degrees.
- Once you have all of the toppings on the pizza, place in the oven until the cheese begins to brown - approximately 15 minutes.
- Remove from the oven, let cool, and serve.
