Easy Clam Pasta

  1. Bring pasta to boil in a large kettle of salted boiling water; cook for recommened number of minutes.
  2. While pasta is boiling, mince the fresh garlic and fresh herbs if using. Set everything else out in easy reach.
  3. Drain the pasta in collander and cover to keep warm.
  4. In same pot used for pasta, heat the olive oil and add the garlic; saute for one minute but do not let it brown. (If using any additional vegetables, add them here and saute with the garlic.)
  5. Add the can of minced clams, including the juice; add the herbs and cook for one minute more.
  6. Put the drained pasta back into the pot and toss it with the oil, garlic, clams and herbs. If the pasta seems too dry, you can add a little bit of warm water, more olive oil, some white wine, more clam juice or other mild broth.
  7. Toss the pasta with the grated cheese.
  8. Serve and pass additional grated cheese if desired.
