Easy Clam Pasta
- 1/2 lb. dry pasta, any shape
- 1 6 oz. can minced clams
- 2 large cloves fresh garlic
- 2 Tbls. olive oil
- 1/2 tsp. dry mixed Italian herbs -or- 2 Tbls. fresh (any of these: thyme, oregeno, rosemary, parsley, basil)
- 1/4 cup grated parmensen cheese
- Bring pasta to boil in a large kettle of salted boiling water; cook for recommened number of minutes.
- While pasta is boiling, mince the fresh garlic and fresh herbs if using. Set everything else out in easy reach.
- Drain the pasta in collander and cover to keep warm.
- In same pot used for pasta, heat the olive oil and add the garlic; saute for one minute but do not let it brown. (If using any additional vegetables, add them here and saute with the garlic.)
- Add the can of minced clams, including the juice; add the herbs and cook for one minute more.
- Put the drained pasta back into the pot and toss it with the oil, garlic, clams and herbs. If the pasta seems too dry, you can add a little bit of warm water, more olive oil, some white wine, more clam juice or other mild broth.
- Toss the pasta with the grated cheese.
- Serve and pass additional grated cheese if desired.
