Pumpkin Pudding Superfood
- 1/2 cup granulated sugar (387 calories) 1/4 cup=194 calories
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground ginger (optional)
- 1/4 tsp. ground cloves (optional)
- 2 large eggs (with high omega-3 content, as noted on label) (154 calories)
- 1 can (15 oz.) pure pumpkin (175 calories)
- 1 can (12 oz.) evaporated fat free milk or lowfat milk (480 calories) 6 oz.=240 calories; 6 oz. skim milk=63
- Preheat oven to 350oF. Lightly grease 11" x 7" baking dish.
- Combine sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk. Pour into prepared baking dish.
- Bake for 40 minutes or until center is slightly wiggly. Do not over bake. Let cool on wire rack. Serve immediately or refrigerate.
