Turkey Soup
- 2 Turkey Drumsticks, cooked
- 2 Turkey Wings, cooked
- 8 quarts Chicken Stock
- 2 Onions, chopped
- 1 Bay Leaf
- 1 tablespoon Salt
- 1 teaspoon Pepper
- 4 sprigs Parsley
- 1/2 teaspoon Thyme
- 2 cloves Garlic,chopped
- 4 Carrots, thinly sliced
- 1 bunch Celery, thinly sliced
- 28 ounces Canned Chopped Tomatoes
- 2 tablespoons Fresh Dill
- 1 cup Rice
- Place turkey pieces in large soup kettle with broth. Simmer for 1 hour.
- Remove turkey bones and trim meat from bones and reserve.
- Add onions, bay leaf, salt, pepper, parsley, thyme and garlic. Bring to a boil and simmer 1 hour more.
- Add rest of ingredients except turkey meat. Simmer 35-45 minutes more. Add turkey meat and heat through.
