Greek Isle Pasta Salad
- 1 package Greek Isle Olive Oil Blend Mix from Gourmet Creations
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup red wine vinegar
- 3 cups cooked Rotini Pasta or Bowtie Pasta
- 1 cup fresh Portabella Mushrooms, Sliced
- 12 cherry tomatoes, sliced in half
- 1 cup red and green bell peppers
- 3/4 cup crumbled Feta cheese
- 1/2 cup chopped red onion
- 1/2 cup whole black olives
- 1 cup sliced pepperoni in thin strips
- Optional: Add 1/2 cup sundried tomatoes
- 1. Combine all veggies in a bowl with pasta and set aside.
- 2. Mix package of Greek Isle Olive Oil Blend with 3 Tbsp of water and let sit 5 min. Then mix it with 1/2 cup olive oil and add balsamic and red wine vinegar to it and mix well.
- 3. Pour seasoning mixture and oils over pasta and toss well. Cover and refrigerate overnight for flavors to combine. Next day serve. Enjoy!
