Best Ever Carrot Muffins
- 1 1/4 cup flour
- 1/4 cup whole wheat flour
- 1 cup white sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon alspice
- 2 cups finely grated carrots
- 1/2 cup raisens
- 1/2 cup walnuts
- 1/2 cup angel flake coconut
- 1 apple, peeled, cored, and grated
- 3 eggs
- 1 cup vegetable oil
- 1 1/2 tsp vanilla
- Put all ingredients in large mixing bowl, mix well. Grease regular sized muffin tin (for twelve muffins).
- Preheat oven to 350. Fill tins to top. There should be exactly enough for the twelve. Bake for 25 minutes.
