Creamy Creole Seafood And Pasta
- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 1/3 cup finely diced red bell pepper
- 1/3 cup finely diced green bell pepper
- 2/3 cup milk
- 8 ounces cream cheese
- 2 teaspoons Creole seasoning
- 8 ounces cleaned lump crabmeat
- 1/2 pound peeled cooked medium shrimp
- salt and pepper
- 2 tablespoons fresh chopped parsley
- 1.Cook pasta in a large pot of water according to package directions. Drain when cooked.
- 2.Meanwhile, in a large skillet, heat oil to medium high and saute onions and peppers for a 3-5 minutes or until slightly soft.
- 3.Add milk, cream cheese and Creole seasoning to pan. While stirring frequently, lower heat to medium and cook until sauce is smooth. Stir in crabmeat and shrimp; cook for 4 to 5 minutes or until seafood is heated through.
- 4.In a large bowl, toss the pasta with sauce. Season with salt and pepper to taste. Sprinkle with parsley before serving.
