Ultimate Chocolate Rice Pudding
- 5 Cups Whole Milk
- 2/3 cup Arborio Rice
- 3/4 cup Sugar
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Ground Allspice
- 1/2 teaspoon ground cinnamon
- 1 Tablespoon Pure Vanilla Extract
- 1/2 cup Whole Milk
- 1 packet Pre-melted unsweetened chocolate*
- *(1 packet = 1 ounce or 1 square Unsweetened Baking Chocolate)
- *(1 packet = 3 tablespoons baking cocoa powder + 1 tablespoon shortening or oil)
- In medium sauce pan combine 5 cups milk, rice, sugar, ginger, allspice, cinnamon, and vanilla. Bring milk to a boil, stirring occasionally. Reduce heat to medium low and simmer, stirring frequently, for approximately 30 minutes. Add in 1/2 cup milk and continue to simmer for another 10 minutes or until rice is tender and mixture thickens. Remove pan from heat and stir in Chocolate. Allow the mixture to cool for 10 minutes stirring occasionally.
- Pour rice pudding into serving bowls, cover, and refrigerate for 3 hours. This may be made a day ahead.
