Lemony Blueberry Bars
- CRUST:
- 3/4 cup unsalted butter,melted (1 1/2 sticks)
- 1/2 cup confectioners' sugar
- 2 tsp. vanilla extract
- 1/4 tsp. salt
- 2 1/4 cup all-purpose flour
- LEMON FILLING:
- 2 cups granulated sugar
- 1/3 cup all-purpose flour
- 6 eggs
- 2 tsp. lemon zest
- 1/2 cup lemon juice
- 1 cup bluberries
- 1/4 cup confectioners' sugar
- Pre-heat oven to 350. Line a 13x9x2 inch baking pan with aluminum foil. Coat with non-stick cooking spray. (Or butter)
- For Crust:
- In a bowl stir together the butter, confectioners' sugar, vanilla and salt. Gradually stir in the flour until smooth. Press the dough into the prepared pan. Bake at 350 for 20 minutes or until edges are brown.
- For Filling:
- In a bowl, mix together the granulated sugar and flour. Whisk in eggs (one at a time) until smooth. Stir in lemon juice and zest. Fold in the berries and pour filling over the crust.
- Bake at 350 until set, about 30 minutes, let cool in pan on a wire rack. When cool, dust with confectioners' sugar and cut into squares, (or diamonds).
