Flank Steak W White Bean Salad
- 1 lb flank steak
- 2c white beans (homemade the day before or canned)
- 1 large heirloom tomato diced (use the best tomato you can find)
- 1 med sweet onion diced
- 1/4c plus 2tbl extra virgin olive oil
- 2 tbl balsamic vinegar
- 2 tbl sugar in the raw
- salt and pepper
- prepare grill til hot
- season flank steak with 2tbl olive oil, salt and pepper to taste. i mix chipotle pepper powder with butcher pepper for a hot taste
- grill flank 3-4 min per side til rare
- let stand 15 min
- meantime combine beans, cucumber, tomato and onion in serving bowl
- whisk together 1/4 c olive oil, balsamic vinegar, sugar, and salt and pepper to taste; pour over beans and blend gently
- to serve: put bean salad on plate. slice flank thinly across grain, and fan slices on plates over beans
