Pasta W/ Tuna, Serrano Ham, And Olive Creme Sauce
- 2 Tblsp. Olive Oil
- 2 shallots, chopped
- 1.5 Tblsp. orange zest
- 1/8 cup minced Serrano ham
- 4 Tblsp. olive paste (mixed olives preserved in olive oil, mashed to a paste)
- 4 oz. can of high-quality tuna in olive oil (Ventresca or other)
- 3/4 cup lowfat half-and-half
- 1/2 box multigrain pasta
- -Heat olive oil on medium-high
- -Add shallots and saute until soft and brown
- --Add orange zest and minced Serrano ham and saute for another 5 minutes, stirring well
- --Add olive paste and stir for another 2 minutes or so until all is well blended
- --Add tuna with about 1 Tblsp. of the oil, and fold in trying to keep tuna in chunks. Cook for a few minutes
- --Add half-and-half and turn up heat to high, boil down until sauce is thickened
- --Pepper to taste. There should be enough salt from the ham and olives, but add more if necessary
- --Prepare 1/2 box of pasta al dente and put into service bowl. Pour sauce over top of the pasta and lightly blend in with wooden fork, making sure to not break up tuna further
