Walnut Spice Cookies (Gluten Free)
- 1 1/4 c. brown rice flour
- 1/2 c. tapioca flour
- 1/4 c. potato starch
- 1 t. baking powder
- 1/2 t. baking soda
- 1/2 t. xanthan gum
- 1 t. cinnamon
- 1/2 t. nutmeg
- 1/2 t. allspice
- 1 c. sugar
- 1/3 c. oil
- 1/4 c. milk (cow, soy, rice)
- 1 t. gluten free vanilla
- 1/2 c. walnuts, chopped
- Mix together the flours, baking powder, baking soda, xanthan gum and spices in a bowl; set aside. Combine the sugar, oil, milk and vanilla in a medium bowl. Pour the dry ingredients into the wet and blend together. Add the walnuts and blend until just incorporated. Place by the rounded tablespoon on a greased cookie sheet. Bake at 350 degrees F for 18-20 mins.
