Breakfast Casserole

  1. Preheat oven to 375 degrees. Lightly grease a 13x9x2 glass casserole
  2. Press Pillsbury biscuit dough into the bottom of the casserole spreading so that dough meets edge to edge.
  3. Brown pork sausage, drain and set aside. In the same pan saute the onion and peppers until tender. Return the pork sausage to the same pan and heat through.
  4. Beat eggs until frothy then stir in 1 cup of shredded cheddar cheese.
  5. Pour cheese mixture over the biscuit dough. Cover with sausage mixture and top with additional cheese (if wanted)
  6. Bake the casserole for 20-25 minutes until puffy and golden brown.
