Masala Aloo

  1. Roughly crush the potatoes. Works best with Mortar and Pestle or Vegetable Masher.
  2. In a pan, add oil. When its slightly warm,add asafoetida,mustard seeds,cumin seeds,fennel seeds,curry leaves.
  3. When the mustard seeds flutter, add ginger-garlic-green chili paste. Stir for a while.
  4. Add onion and tomatoes. Cook for a while.
  5. Add potato chunks. Stir again.
  6. Add Salt and sugar.
  7. Add all the masala powders and mix well.
  8. Add water. Stir once. Cover and cook for 5 mins.
  9. Finally garnish with cilantro and serve with hot puri or roti.
