Meat Loaf -
- 1 lb. ground beef
- 1 lb. ground veal
- 1 lb. ground pork
- 1 T. Worcestershire sauce
- 1 T. Dijon mustard
- 1/3 C. oatmeal
- 1/3 C. crushed saltine crackers
- 1 med. onion, chopped
- 1/2 C. milk
- 2 garlic cloves, chopped, saute in oil
- salt and pepper
- 1/2 C. parsley chopped
- 1/2 C. thyme
- On Top:
- 1 C. catsup
- 3 T. red wine vinegar
- 1-2 tsp. Worcestershire sauce
- 3 strips of bacon
- Mix all the meatloaf ingredients together. It shouldn't stick to the bowl. Put into a foil-lined and sprayed pan about 5 x 9 inches.
- Cover with the "on top" ingredients.
- Bake in 350 degree oven for about 1 hour until internal temperature is 160 degrees.
- To grill
- Cook in pan over indirect grill heat for about 2 hours.
