Yellow Rice ( Con Gandules)
- 1 can Gandules
- 3 cans chicken broth
- 2 can tomato sauce (Goya)
- 1 onion chopped
- 1/2 red pepper chopped
- 1/2 jar salad olives chopped (Goya)
- 3 heaping Tbsp Recaito (Goya)
- 1 Tbsp fresh basil chopped
- Adobo
- 2 1/2 lbs Carolina rice ( ~ 5-6 cups) rinsed
- Country style ribs seasoned with Adobo over night & chopped into 1/2 in cubes
- 1/4 cup Canola oil
- - Heat pot and add Gandules
- - add broth & tomato sauce
- - cook for a bit
- - add onions, pepper, olives, Recaito. oregano, black pepper, basil & Adobo ( 6 turns around the pot)
- - bring to a boil
- -add rice and stir constantly until dry
- - add pork and 1/4 cup oil
- - mix well, cover with foil and lid
- - stir often over low flame about 2 hrs until cooked through and no longer hard
- - keep moving rice from top to bottom
