Black Bean Sauce

  1. 1.Place Beans in Ice Cream Container and cover with cold water so that there is about an Inch of water above the beans. Soak for 1 hour.
  2. 2.Drain beans and reserve the water.
  3. 3.Place Beans in food processor and blend until smooth. Add the reserved water into the blender if necessary to get a fluid motion going.
  4. 4.Add all ingredients to the 5 lt. bucket and whisk to combine evenly. (If too thick ad the more of the reserved water until at sauce consistancy.
  5. 5.Turn out into the 2 Litre jugs and correctly day dot the jugs.
  6. 6.The pan section must have at least 1/2 a jug on hand for each service and the remaining sauce will be stowed in the cool room.
  7. Time Frame Soak: 1 hr Prep time: 20 Min's (At the most)
