Mediterranean Pizza
- 6 slices pita or flat bread
- Hummus mixture
- 1 15 oz can garbonzo/chickpeas, drained and juice reserved
- 1/8 cup extra virgin olive oil
- juice of 1/2 fresh lemon
- 2 cloves garlic
- 1/4 tsp kosher salt, or to taste
- 1 tsp fresh parsley leaves
- Toppings
- 8 oz crumbled feta cheese
- 1/2 chopped black olives, or jarred olive tapanade
- roasted red pepper strips, drained and dried on paper towel
- in bowl or blender puree chickpeas, olive oil, lemon juice, garlic cloves, salt and parsley leaves, add enough reserved juice to make a spreadable consistancy.
- Spread onto pita bread and top each with chopped black olives/or tapanade, roased pepper stips and then crumbled feta on top. Bake in 425 degrees oven until hot and cheese has melted. Can be broiled or grilled.
