Winter Fruit Salad
- 1 1/2 Tbsp. sugar
- 2 1/4 tsp. flour
- 1/4 tsp. dry mustard
- 1/8 tsp. salt
- dash of red pepper
- 1 egg yolk, slightly beaten
- 1/2 c. milk
- 2 1/4 tsp. margarine
- 1 Tbsp. vinegar
- 4 Delicious apples, cored and chopped
- 1 (8 oz.) can crushed pineapple, drained
- 3/4 c. chopped pecans
- lettuce leaves
- Combine the first 5 ingredients in top of double boiler. Stir in egg yolk and milk.
- Add margarine.
- Bring water to a boil. Reduce heat to low and cook until margarine is melted, stirring constantly.
- Gradually add vinegar.
- Cook, stirring constantly, until mixture is thickened and smooth.
- Cool completely.
- Combine apples, pineapple and pecans.
- Stir dressing into fruit. Refrigerate just until chilled.
- Serve on lettuce leaves.
