Jaymie'S Cornbread Dressing
- 2 cup cornmeal
- 1/2 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp sugar
- 6 large eggs
- 2 cup buttermilk
- 2 tbs. melted butter
- 1/2 cup butter
- 3 bunches green onions, chopped
- 4 ribs celery
- 1 16-oz. herb seasoned stuffing mix
- 5 14-oz cans chicken broth
- Combine first 6 ingredients in large bowl. Stir together 2 eggs and buttermilk. Add to dry ingredients, stirring until just moistened.Heat 2 tbs. butter in cast iron skillet and stir batter into hot butter. Bake 425 for 25 minutes. Cool and crumble
- Melt butter in large skillet and saute green onions and celery until tender
- Stir together remaining 4 eggs in large bowl. Add cornbread, onion mixture, stuffing mix and broth until blended. Spoon dressing in a 13x9 baking dish lightly greased and bake uncovered 350 for one hour
