Belgian White Ale Orange Cookies
- 2 (12 oz.) white ales
- 1/4 cup honey
- 3/4 cup unsalted butter
- 1 cup powdered sugar
- 1/4 cup brown sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons ground coriander
- 1 orange, zest only
- 1/2 teaspoon baking soda
- 1 cup white chocolate chips
- Add the beer and honey and cook it down to a thick syrup (about 1/3 c. liquid).
- Whisk together flour, spices, baking soda, and zest.
- After syrup has reduced and cooled, cream together the butter and sugars, then add in egg and vanilla.
- Stir in half of the dry ingredients, followed by the syrup, then the remaining dry ingredients. Lastly, mix in chocolate chips.
- Bake for 18-20 minutes at 350 degrees Fahrenheit. Rotate the cookies halfway through.
