Warm Potato Salad With Steak
- 2 medium sized Serlion Steaks
- 4 medium sized potatoes
- 1 Red Bell Pepper
- 1 large tomato (or 2 smaller ones)
- 4 green onions
- 1 shallot, finely diced
- 3 Tbs. Red Wine Vinegar
- 3 Tbs. Extra Virgin Olive Oil (Plus a little more to coat the steaks)
- 1 tsp. dijon mustard
- 1 tsp. fresh parsley, roughly chopped
- 1 fresh mint leaf, roughly chopped
- salt
- pepper
- Put a pot of salted water on to boil and cut the potatoes into 1 inch cubes. Boil potatoes for about 10 mins. (or until a fork can be easily inserted).
- While potatoes boil, chop Pepper, Tomato, and Green onions into a medium to fine dice and place in a large mixing bowl.
- In a smaller bowl, make a dressing with the shallot, vinegar, mustard, herbs, and olive oil, wisking well.
- When Potatoes are cooked, drain and set aside. Then heat a large, heavy skillet with a bit of oil, and cook the steaks until medium rare (about 4 mins. per side).
- While steaks are resting, add potatoes (they should still be warm) and dressing to the large bowl, mix and season to taste with salt and pepper.
- Divide the salad amongst 4 plates. Slice the meat on the diagonal, and place half a steak on each, fanning them over the salad. serve immediately.
