Wild Rice And Chicken Casserole
- 1 box Uncle Ben's wild rice (original)
- 1 can cream of mushroom soup
- 4 oz. fresh mushrooms
- 1 medium onion
- 2 stalks celery
- 4 oz. sour cream
- 2 Tbsp. butter or margarine
- boneless chicken breast
- 1 can evaporated milk
- 1 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- Cook wild rice according to directions.
- Set aside.
- Marinate boneless chicken breasts in milk, lemon juice and Worcestershire sauce.
- Saute onions, mushrooms and celery in butter until onions are transparent.
- Stir into wild rice along with cream of mushroom soup and sour cream.
- Bake in a 9 x 13-inch dish at 350u0b0 for 30 minutes.
- Remove and top with marinated chicken.
- Cook until chicken is done.
