Southern Peanut Butter Pie

  1. Mix together the powdered sugar and peanut butter until it is a coarse, crumbled mixture; set aside.
  2. Beat egg yolks until fluffy.
  3. Combine sugar, salt and cornstarch; beat into egg yolks. Beat in hot milk gradually.
  4. Cook in a double boiler until smooth and thick, stirring constantly.
  5. Remove from heat.
  6. Add butter and vanilla.
  7. Cover bottom of pie shell with 2/3 of the peanut butter mixture.
  8. Pour in the hot custard.
