Zucchini Cake & Cream Cheese Frosting
- ZUCCHINI CAKE:
- 3 eggs
- 1 cup oil (vegetable)
- 2 cups sugar
- 2 cups grated zucchini
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon nutmeg
- 3 teaspoons cinnamon
- 1 small can crushed pineapple
- 1 1/2 cups raisins
- 1 cup nuts, chopped (optional)
- CREAM CHEESE FROSTING:
- 8 ounces soft cream cheese
- 1 box 10X powdered sugar
- 1 stick butter, softened
- 1/2 teaspoon vanilla
- Cream eggs, oil, sugar, zucchini & vanilla. In a separate bowl sift: flour, salt, baking soda & powder, nutmeg and cinnamon. Combine with creamed mixture. Then add pineapple, raisins & optionally nuts. Grease and flour tube pan. Bake for 1 hour at 325. Allow to cool. Mix frosting ingredients together. Frost cake.
