Zucchini Cake & Cream Cheese Frosting

  1. Cream eggs, oil, sugar, zucchini & vanilla. In a separate bowl sift: flour, salt, baking soda & powder, nutmeg and cinnamon. Combine with creamed mixture. Then add pineapple, raisins & optionally nuts. Grease and flour tube pan. Bake for 1 hour at 325. Allow to cool. Mix frosting ingredients together. Frost cake.
