Turkey Madisona
- 2 cups cooked turkey (or chicken)
- 3 T Butter
- 1/2 cup diced celery
- 1/3 cup thinly sliced onions
- 1/2 cup sliced carrots
- 2 cups fresh broccoli florets
- 3 T flour
- 2 egg yolks lightly beaten
- 1 1/2 cups chicken stock
- 3 T dry white wine
- Minced parsley
- Remove skin and cut the turkey into cubes
- Melt butter and saute vegetables (except broccoli) over med high heat until they begin to brown slightly. Add broccoli and saute until just tender.
- Sprinkle flour over the top and stir in the stock until the sauce becomes smooth.
- Remove from heat and stir in egg yolks. Add the turkey and stir over low heat until the sauce begins to thicken.
- Remove from heat and stir in the wine.
- Serve over rice and top with parsley.
