Berries Fondant
- 200g of berries (frozen works, I recommend raspberry and blackcurrant)
- 2 eggs
- 60g flour
- 60g sugar
- 1 teaspoon rosewater
- 8 squares of white chocolate
- and coarsely crushed pistachios for decoration
- Preheat oven to 200 u0b0 C.
- Beat eggs and sugar in a bowl until mixture whitens. Mix the berries with a blender and pour into a saucepan. Heat a few minutes to thaw the fruits. Add the fruits to eggs and sugar and blend together, followed by flour. Lastly, add the rosewater.
- Divide the dough into four moulds (the color reminded me flowers so I opted for floral ones, but buttered and floured ramekins are very good as well) and drive two squares of chocolate in each. Mine were not deep enough so they were visible after cooking!
