German Potatoe Salad

  1. wash and boil the potatoes until tender, about 20 min. I use potatoes that don't have too much starge, like salad potatoes or red. When tender, drain and peel them while still hot. Use a fork to hold them. Chill them until cold and when cold slice them. chop onion very fine and put them to potatoe slices. Add vinegar and oil, salt and pepper and beef bouillon and mix with big spoon carefully so that potatoe slices won't be mashed too much. Then add mayo, mix under. Chop bacon I prefer a very good smoked one, big slices or one piece if available, cut it into small quarters, put in pan and fry until almost crisp. Seperate the greece, (I keep greece and use it to cook roasts, chops, schnitzel or other meet instead of oil) Add the bacon bits to the salad, stir again and let rest in fridge until serving. Before serving stir and taste, you might need to add some salt and beef bouillon
