Fran'S Cheesecake
- 1 stick unsalted butter
- 1/2 box graham crackers crumbs
- 3 - 8 oz. pkgs. cream cheese (room temperature)
- 1 1/2 c. sugar
- 4 eggs
- 1 pint sour cream
- 2 tsps. vanilla
- ** alternative Passover bottom
- 1/3 c. brown sugar
- 3/4 c. cake meal
- 1 c. ground nuts
- 1/2 stick butter
- 1. Preheat oven to 350F. Mix graham cracker crumbs with the butter. Press into bottom of spring form pan that has been sprayed with cooking spray to make it easier to remove cake for serving. Bake
- for 10 minutes.
- 2. Mix cream cheese with 1 cup sugar. Beat eggs with 5 tablespoons sour cream and 1 teaspoon vanilla. Add to cream cheese mixture and beat for 15 minutes. This step is very important to insure a smooth and silky texture.
- 3. Pour into spring form pan and bake for 30 minutes. Turn off oven and let sit in unlit oven for 30 minutes.
- 4. Remove cake from oven and preheat oven to 450F.
- 5. Mix remainder of sour cream with 1/2 cup sugar and 1 teaspoon vanilla. Pour on top of cheesecake and bake for 5 minutes.
- 6. Cool and place in refrigerator overnight.
- 7. Top with fresh berries or canned fruit filling. Fresh berries can be glazed by melting jam diluted with a little water and pressed through a fine sieve.
