Meaty Chili With Beans
- 2 lbs extra lean ground beef or turkey
- 1 Lg Walla Walla Sweet yellow onion diced
- 4 or 5 celery stalks of the tender inner stalks diced
- 2 cups dry red kidney beans( can used canned but it really needs to cook a while so dry work best)
- 2 cups dry pinto beans
- 1 tsp salt
- 1 tbs ground pepper
- 2 tbs minced garlic(2 cloves)
- 2 packages of Store bought chili seasoning packs, mild or hot(We like the spicy)
- 28 oz canned chunky tomato sauce
- 12 oz diced green Chile peppers
- 16 oz canned Mexican style tomato's
- 1 tsp unsweetened cocoa powder
- Brown meat in skillet, add onion and cook till translucent,Drain and set to side. Add chunky Tomato sauce and diced Mexican tomato and green chili's in big pot,stir in spices and cocoa and garlic, let simmer for 10 minutes, now add in beans and celery, stir and reduce heat to low simmer add meat and onion mix, cover and simmer 2 or 3 hrs stirring occasionally, till beans are tender and celery is translucent.
- serve in big bowl with grated chedder on top with a dollop of sour cream and chopped green onions sprinkled on top
