Vegetable Pulao
- 2 cups basmati rice
- 3 onions, finley chopped
- 1 small cauliflower, chopped
- 1 cup green peas
- 1 cup cabbage, chopped
- 1 bell pepper, chopped
- 2 French beans, chopped
- 2 tomatoes, chopped
- 4 cloves garlic
- Small piece of ginger
- 4 green chilis
- Few cilantro leaves, chopped
- 2 cardamom
- 2 cloves
- 3 Tbsp. oil
- 1/2 tsp. turmeric
- Salt to taste
- Grind together 3 cloves of garlic, 4 green chilies, and a small piece of ginger.
- Season oil with cardamom and cloves, add chopped onions, and fry until light brown.
- Add the ground spices and fry until oil separates.
- Add vegetables along with turmeric and coriander powder.
- Fry for 2 mins.
- Add enough water to boil veggies for 5 minutes.
- Half boil rice.
- Remove the starch from the rice and add it to the vegetables and mix well.
- Add a few leaves of mint and keep it on the stove over low flame for 3 mins. Serve hot with raitha.
