Mediterrean Crab Cakes
- 6 oz Maryland Lump Crab Meat
- 1 cup fresh Italian Parsley
- 3 Brown Eggs
- 1 cups bread crumbs
- 1/2 cup Graham cracker crumbs
- 1/2 tsp ground corriander
- 1/2 tsp salt & Pepper
- 1/2 tsp ground mustard
- 1/2 tsp chopped garlic
- 1/2 tsp basil chopped fine
- 1 white onion diced fine
- 1 red sweet pepper diced fine
- 6 grape leaves
- 1 cup cooked rice
- 1 Tsp lemon juice
- Preparations:
- pre heat oven/ broiler 350 degrees
- Combine crab, eggs, spices, crumbs, lemon, onion peppers and rice.
- roll mixture into small cigar rolls and broil them for 7 minutes...remove from oven and wrap them in the grape leaves tight...re-place in oven for 10 more minutes and then serve.
